Drumsticks with mushrooms and roasted blue cheese potatoes

Serves: 4

Preparation time: 10 minutes

Cooking time: 20 minutes


  • 8 Lilydale drumsticks
  • 500g small potatoes
  • 5 sprigs thyme
  • 2 bay leaves
  • 2 tblsp olive oil
  • 8 medium flat mushrooms
  • 40g butter
  • Blue cheese


  1. Place the chicken and potatoes in a baking tray with the thyme and bay leaves. Drizzle with oil. Bake in preheated 190C oven for 25 minutes or until chicken and potatoes are just cooked through.
  2. In the last 15 minutes of cooking Add the mushrooms to the pan, stem side up. Dot each mushroom with butter and season with pepper.
  3. Before serving, cut a cross in the top of the potatoes and crumble over blue cheese.
