Chicken with caper and herb salsa

Serves: 4

Preparation time: 15 minutes

Cooking time: 10 minutes

Ingredients:

  • 2 Tblsp torn mint leaves
  • ¼ cup roughly chopped parsley
  • 1 large white onion, chopped
  • 2 Tblsp chopped capers
  • 2 Tblsp lime juice
  • ¼ cup olive oil
  • 4 Lilydale chicken breast
  • 2 tspn ground coriander
  • Crusty bread to serve

Method

  1. To prepare the salsa, combine the herbs, onion, capers lime juice and oil, season with salt and pepper. Set aside.
  2. Lightly coat the chicken with the coriander. Heat a lightly greased frying pan over medium high heat and cook the chicken until golden and just cooked through, about 3-4 minutes each side. Slice chicken and serve with the salsa, lemon wedges and crusty bread.
