Roast vegetable mash

Serves: 2

Preparation time: 20 minutes

Cooking time: 1 hour

Ingredients:

  • 1 large potato, peeled
  • 200g pumpkin, peeled
  • 200g sweet potato, peeled
  • 1 medium parsnip, peeled
  • 1 medium onion, chopped
  • 1 tomato, quartered
  • 3 cloves garlic
  • Salt and pepper to season
  • 1 Tblsp olive oil
  • 20g butter

Method

  1. Cut the potato, pumpkin, sweet potato and parsnip into large pieces, about 2cm.
  2. Place in a deep baking tray with the onion, tomato and garlic. Season with salt and pepper. Drizzle with oil.
  3. Roast the vegetables in 180C preheated oven for 1 hour or until soft and lightly golden. Stir half way through cooking.
  4. Transfer vegetables to a bowl, add the butter and mash roughly with a fork.
