Pea puree with chives and sour cream

Serves: 2

Preparation time: 30 minutes

Cooking time: 15 minutes

Serve this side with Lilydale Breast Roasts


  • 20g butter
  • 1 small leek, finely chopped
  • 2 tspn finely chopped mint
  • 2 cups frozen peas
  • 1 lettuce leaf, shredded
  • 1 ½ cups chicken stock
  • Salt and pepper to season
  • 1 Tblsp sour cream
  • 1 Tblsp chopped chives


  1. Melt butter in a pan, add leek and fry for 5 minutes, until soft but not browned.
  2. Stir in the mint, add peas, lettuce and pour in stock. Bring to boil, then reduce heat and simmer for 3-5 minutes or until peas are just tender.
  3. Drain thoroughly and transfer peas to a food processor and blend until smooth. Season with salt and pepper. Stir through the sour cream and chives.
