Kale shallot and Brussels sprouts stir fry
Preparation time: 10 minutes
Cooking time: 8 minutes
Serve this side with Lilydale Breast Roasts
- 1 Tblsp coconut oil
- 2 shallots, cut into 2cm pieces
- 4 Brussels sprouts, finely shredded
- 3 cups roughly chopped kale leaves
- ½ cup cooked quinoa
- Heat oil in a deep frying pan, add shallots and cook for one minute. Add sprouts and kale, stir fry for about 2-3 minutes or until vegetables are just cooked.
- Toss through quinoa and warm through.
