Kale shallot and Brussels sprouts stir fry

Serves: 2

Preparation time: 10 minutes

Cooking time: 8 minutes

Serve this side with Lilydale Breast Roasts

Ingredients:

  • 1 Tblsp coconut oil
  • 2 shallots, cut into 2cm pieces
  • 4 Brussels sprouts, finely shredded
  • 3 cups roughly chopped kale leaves
  • ½ cup cooked quinoa

Method

  1. Heat oil in a deep frying pan, add shallots and cook for one minute. Add sprouts and kale, stir fry for about 2-3 minutes or until vegetables are just cooked.
  2. Toss through quinoa and warm through.
