Jerk Spice traces its roots to Jamaica and is made from allspice called pimento and chilli. Jerk cooking and seasoning has followed the Caribbean diaspora all over the world, and forms of jerk can be found at restaurants and now in the Lilydale Kitchen.
The hot spice is perfect with Lilydale chicken drumsticks, marinated for flavour and later chargrilled for a crispy skin. Here’s our simple recipe for Jerk Chicken Drumsticks with Pineapple Chilli Salsa and Coconut Basmati Rice.
