Day #2 Raise a Toast

The tree is decorated, the lights are strung and the Christmas tunes are playing. It is time to begin the celebrations. Welcome your guests with a refreshing Pineapple, Coconut and Ginger Beer Cooler and toast to the best Christmas ever.
Serve soft drinks and cocktails in old and new crystal glasses of varying heights. Place glasses on a vintage tray and decorate with mint or elegant floral garnishes for a truly bespoke affair.
Pineapple, Coconut & Ginger Beer Cooler
Preparation time: 20 minutes + 12 hours to macerate (optional)
- 1/2 pineapple, peeled, trimmed and cut into 24 ‘swizzle sticks’
- 2 tablespoons coconut liqueur
- extra, 2/3 cup coconut liqueur, chilled
- 2 cups coconut water, chilled
- 1 litre ginger beer, chilled
- lime slices, to serve
- mint leaves, to serve
- ice, to serve
1Combine the pineapple ‘swizzle’ sticks and 2 tablespoons of coconut liqueur in a non-reactive container and macerate the pineapple in the refrigerator overnight.
2Combine the extra coconut liqueur, coconut water and ginger beer in a tall jug, stir to combine.
3Place 3 pineapple ‘swizzle’ sticks in each serving glass, add lime slices, mint leaves and ice cubes, pour over the coconut and ginger beer drink.
